Working only with native grape varietals, he ferments naturally with wild yeasts in buried clay amphorae. \u003c\/p\u003e\n \u003cp\u003eBini's \u003cem\u003eZibbibo Bianco\u003c\/em\u003e is made from 60 year old Zibbibo vines grown on volcanic, sandy soil. Harvested by hand, the grapes are de-stemmed, pressed gently with skin maceration and 20 days of spontaneous fermentation in terracotta jars before aging 3 months in amphora.
